Shad pepsin characterization and industrial application

Antonella Acevedo Gomez, a doctoral fellow at the Institute of Modeling and Technological Innovation (IMIT – CONICET – UNNE), gave a talk on the use of shad pepsin and its application in industry.

Antonella comments that the choice of shad is due to the fact that it is an autochthonous species, and fish consumption has been increasing and has a large percentage of waste, including pepsin, which is widely used in industry.
